Ingredients:
- ½ white cabbage, shredded
- 1 red capsicum (pepper), thinly sliced
- 2 spring onions (scallions), thinly sliced
- 1 handful of snow pea (mangetout) sprouts, cut into 3 cm (1 ¾ in) lengths
- 2 handfuls of baby spinach leaves, roughly chopped
- 2 medium carrots, cut into thin strips
- 2 small Lebanese cucumbers, cut into thin strips
- ¼ cup activated almonds, roughly chopped, to garnish
- drizzle of salad dressing, to serve
Directions
- Place all the vegetables in a large bowl and gently toss until combined.
- Sprinkle over the almonds, drizzle with salad dressing and serve.
