Ingredients:
- l large brown onion, roughly chopped
- 3 cloves garlic, finely chopped
- l long red chilli, seeded and finely chopped
- 1 medium carrot, grated
- 1 small handful of fiat-leaf (Italian) parsley, roughly chopped
- 2 heaped tablespoons wholegrain mustard
- 1 tablespoon tomato paste
- 1 tablespoon raw honey
- 1 egg
- pink Himalayan salt, to taste
- freshly ground black pepper, to taste
- 500 g (1 lb 2 oz) pork mince
- butter or ghee, for frying
Directions
- Blend all the ingredients, except the butter, in a food processor until the mixture is quite wet.
- Melt the butter in a pan over a medium heat.
- Using wet hands, form meat patties about the size of your palm, then place them in the pan and cook until they are golden brown on both sides.
- Serve with your favourite salad and mayonnaise, or with tomato sauce.
