Ingredients:


  • 12 small grape tomatoes, diced
  • ½ red (Spanish)  onion, diced
  • 1 small bunch of flat-leaf (Italian) parsley, finely chopped
  • 12 oysters, shucked
  • drizzle of Red Wine Vinaigrette

Directions

  1. Mix the tomato and onion in a bowl until well combined.
  2. Stir through the parsley, then enough vinaigrette to coat the tomatoes well.
  3. Place a small amount of the tomato and onion mix on top of each oyster and serve.
