Ingredients:


  • 1 cup unsalted activated cashews
  • 1 tablespoon sesame seeds, toasted
  • ¼ teaspoon dried chilli flakes
  • zest of 1 lime
  • freshly ground black pepper, to taste
  • 1 egg
  • 6-8 small lamb chops
  • 1 handful of coriander (cilantro), roughly chopped
  • juice of lime

Directions

  1. In a food processor or blender, mix the cashews, sesame seeds, chilli flakes, lime zest and pepper until you have fairly fine crumbs.
  2. Transfer the mixture to a bowl and set aside.
  3. Whisk the egg with a fork to make an egg wash.
  4. Dip the chops in the egg wash and then the crust mix, making sure the chops are well coated.
  5. Heat a griddle pan over a medium to high heat and cook the chops for 5 minutes on each side.
  6. Remove from the heat, cover with foil and rest for 5 minutes.
  7. Top with coriander and a squeeze of lime juice and serve with a salad.
