Ingredients:
- 1 tablespoon butter or ghee
- 1 chicken breast
- salt, to taste
- 1 head of broccoli, chopped into small florets and stem diced
- 2 handfuls of baby spinach leaves, roughly chopped
- 1 handful of snow peas (mangetout), ends trimmed and halved
- 1 handful of activated macadamia nuts, roughly chopped
- drizzle of Honey Wholegrain Mustard Dressing, to serve
Directions
Preheat the oven to 170°C (325°F).
- Melt the butter in a pan over a medium heat.
- Season the chicken breast with pepper, then fry in the pan until brown on both sides and cooked through. Set aside to cool.
- While the chicken is cooling, mix the broccoli, spinach, snow peas and macadamia nuts in a bowl.
- Slice the chicken and mix through the salad.
- Drizzle with the Honey Wholegrain Mustard Dressing and serve.
