Ingredients:
- 1 cup unsalted activated cashews
- 1 tablespoon sesame seeds, toasted
- ¼ teaspoon dried chilli flakes
- zest of 1 lime
- freshly ground black pepper, to taste
- 1 egg
- 6-8 small lamb chops
- 1 handful of coriander (cilantro), roughly chopped
- juice of lime
Directions
- In a food processor or blender, mix the cashews, sesame seeds, chilli flakes, lime zest and pepper until you have fairly fine crumbs.
- Transfer the mixture to a bowl and set aside.
- Whisk the egg with a fork to make an egg wash.
- Dip the chops in the egg wash and then the crust mix, making sure the chops are well coated.
- Heat a griddle pan over a medium to high heat and cook the chops for 5 minutes on each side.
- Remove from the heat, cover with foil and rest for 5 minutes.
- Top with coriander and a squeeze of lime juice and serve with a salad.
