Ingredients:
- ¼ white cabbage, shredded
- ¼ red cabbage, shredded
- 2 small Lebanese cucumbers, cut into batons
- 1 large carrot, grated
- 1 spring onion (scallion), finely chopped
- 1 large handful of baby spinach leaves, roughly chopped
- 1 handful of coriander (cilantro), roughly chopped
- 1 small red capsicum (pepper), finely sliced
- drizzle of Sesame and Lime Dressing
- 1 tablespoon sesame seeds, to garnish
- 1 tablespoon dulse flakes, to garnish
- 1 lime, cut in wedges, to serve
Directions
- Place the white and red cabbage, cucumber, carrot, spring onion, spinach, coriander and capsicum in a bowl and mix until well combined.
- Drizzle the Sesame and Lime Dressing over the salad, sprinkle with the sesame seeds and dulse flakes and serve with a wedge of lime.
