Ingredients:


  • ¼ white cabbage, shredded
  • ¼ red cabbage, shredded
  • 2 small Lebanese cucumbers, cut into batons
  • 1 large carrot, grated
  • 1 spring onion (scallion), finely chopped
  • 1 large handful of baby spinach leaves, roughly chopped
  • 1 handful of coriander (cilantro), roughly chopped
  • 1 small red capsicum (pepper), finely sliced
  • drizzle of Sesame and Lime Dressing
  • 1 tablespoon sesame seeds, to garnish
  • 1 tablespoon dulse flakes, to garnish
  • 1 lime, cut in wedges, to serve

Directions

  1. Place the white and red cabbage, cucumber, carrot, spring onion, spinach, coriander and capsicum in a bowl and mix until well combined.
  2. Drizzle the Sesame and Lime Dressing over the salad, sprinkle with the sesame seeds and dulse flakes and serve with a wedge of lime.
